Flesh is crispy, mild, and refreshing, with a sweet flavor perfect for salads, garnishes, or pickling. Enjoy roasted or sautéed with parsnips, carrots, or other root vegetables. Best grown in cool weather. Sow in late summer for a fall crop.

This fancy Asian heirloom is dazzling gourmet cooks everywhere. Outside, it looks like a white turnip with green shoulders. Slice it open and you'll find a magenta center as pretty as stained glass. So gorgeous it doesn't even have to taste good, Watermelon Radish is sweet, delicious and gets milder as it matures.

An Asian classic for centuries, it's spectacular as an appetizer, garnish or sliced in salads and can be stir-fried. Before the foodies discovered it, this Asian heirloom was well kept secret.

Watermelon Radish is a cool weather vegetable, will mature in 29 days, but can stay in the ground a long time without becoming woody. Its flowers are edible, too. Plant seeds in early spring or autumn. You'll have dazzlers in a few weeks.

Germination: 5-7 days

Germination Temperature: Optimum soil temperatures 60-75ºF.

Seed Sowing Depth: 1/2" deep

Sowing Outdoors: Starting in early spring. Sow 1/2-1" apart ,thin to 1-2" apart, soon after the seedlings emerge.

Harvest: 3-4 weeks after planting at 1” in diameter, pull them promptly as they rapidly decline, becoming tough and pithy

Tips: They need rapid growth for optimum results. Provided fertile soil and consistent moisture. For a continuous harvest make successive plantings every 7-10 days when weather is still cool.

RECIPES
SMASHED AVOCADO TOAST WITH WATERMELON RADISH

Ingredients
2 slices of sourdough bread
1 avocado (soft to the touch)
juice of 1/4 of a lemon
pinch of cayenne
salt & pepper to taste
2 watermelon radishes, thinly sliced
sesame seeds to top
Instructions
Toast your bread to your liking.
Open and remove the pit from your avocado.
Scoop the avocado out of its shell with a spoon into a bowl.
Add the lemon juice, and cayenne and smash with a fork.
Next, add salt & pepper to taste.
Using a knife, spread the avocado mixture onto your bread.

Top with sliced watermelon radishes and sesame seeds.
