In the market in Zestafoni, a village in the central Asian republic of Georgia, a stout red-faced woman was standing offering all kinds of "garden" delights, including these peas old fashioned soup peas. Dry soup peas were once common throughout Europe and in America during the colonial period. Peas are of prime food value and make for hearty soups and good eating during the long winter months. Dry peas also prefer slightly acidic, well-drained soils. Once planted, it takes dry peas about 60 days to bloom and 100 days to mature the dry seed. Because high temperature during blossoming results in reduced seed set, production of dry peas as a summer annual in the United States is limited to the northern states.Fiber is far from all that dried peas have to offer. Dried peas also provide good to excellent amounts of four important minerals, two B-vitamins, and protein--all with virtually no fat. Dried peas also feature isoflavones (notably daidzein).
